Ingredients
- chicken wings (mid-joint + drumette)
- cola (regular, not diet)
- ginger, sliced
- scallions, white part
- light soy sauce
- oyster sauce (optional)
- Shaoxing wine
- white sesame seeds (garnish)
Instructions
- Pat the wings completely dry with paper towels. Score each wing once on both sides through the skin. (Wings are dry, with shallow diagonal cuts visible on both sides)
- Heat 1 tbsp oil in a wide pan over medium-high. Sear wings skin-side down until golden, about 2-3 minutes per side. Don't crowd the pan — do two batches if needed. (Skin turns golden-brown and releases from the pan easily)
- Add ginger, scallion whites, and Shaoxing wine. Stir 30 seconds until fragrant. (Ginger and scallion sizzle; wine evaporates with a puff of steam)
- Pour in the cola, light soy sauce, and oyster sauce (if using). The liquid should come about halfway up the wings. Bring to a boil, then reduce to medium-low. (Liquid bubbles vigorously, dark brown with cola foam)
- After 15 minutes, turn the wings and continue simmering until the sauce has reduced by half and coats the wings. (Sauce is thick, glossy, and clings to the wings)
- Turn the heat to high and stir constantly for 1 minute to glaze the wings. Sprinkle sesame seeds and serve hot. (Wings are deep amber with a sticky, glossy coat)
