Ingredients

  • fresh oysters on the half shell
  • mung bean vermicelli, soaked and cut
  • garlic cloves, finely minced
  • light soy sauce
  • vegetable oil

Instructions

  1. Soak vermicelli in warm water 10 minutes. Drain, cut into short pieces. Arrange on each oyster half.
  2. Tap each oyster shell gently — if it stays open and does not close, discard it. Live oysters close when tapped.
  3. Make garlic sauce: mix minced garlic with soy sauce and 1 tbsp oil. Spoon generously over each oyster.
  4. Soak vermicelli in warm water 10 minutes. Drain, cut into short pieces. Arrange on each oyster half.
  5. Steam over high heat for exactly 3 minutes. The oyster should still jiggle when removed. (Oyster edges curl slightly and turn opaque)
  6. Remove from steamer immediately. Sprinkle with chopped scallion if desired. Serve on a platter with lemon wedges.
