Ingredients

  • pork shoulder (boneless, trimmed)
  • light soy sauce
  • honey
  • Shaoxing wine
  • five-spice powder

Instructions

  1. Cut pork into 2.5 cm thick × 5 cm wide strips. Pat dry thoroughly with paper towels.
  2. In a bowl, whisk together light soy sauce, honey, Shaoxing wine, and five-spice powder until smooth. Add pork strips and massage marinade into each piece. Cover and refrigerate at least 8 hours (overnight preferred).
  3. Preheat oven to 200°C (390°F). Line a wire rack over a baking sheet with foil. Arrange marinated pork in a single layer, reserving marinade.
  4. Roast pork for 20 minutes. Flip strips, brush generously with reserved marinade, then roast another 15 minutes.
  5. Increase oven temperature to 220°C (425°F). Brush again with marinade and roast 5–7 more minutes until surface is deeply caramelized and slightly blistered. (Glossy, mahogany-brown surface with tiny amber bubbles)
